4 medium to large russet potatoes
1 (1.25-oz.) pkg. Onion soup mix
¼ - ½ cup olive or canola oil

1. Heat oven to 450°F. Pierce potatoes with fork; place on microwave-safe dish or paper towel or roasting rack in microwave. Microwave on HIGH for 6-8 minutes or until almost tender, turning once halfway through cooking.
2. Dump onion soup mix in a resealable food storage plastic bag,
3. Cut cooked potatoes lengthwise into quarters or sixths, depending on how big the potatoes are. Place in large shallow dish. Drizzle with oil; toss to coat. Place potatoes in plastic bag with seasoning in it; shake to coat. Arrange potatoes on ungreased cookie sheet.
4. Bake at 450°F for 8 minutes or until golden brown and tender.
