"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Lady Fingers, by Marge Reinbold, is from A Little Bit of Heaven! ,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
3 cups mashed potatoes 2 eggs 1 3/4 c flour Salt to taste butter milk
Mix all ingredients. Cut dough into pieces & roll into the size of lady's fingers or larger if desired. Lay on a greased pan & bake at 375 degrees for one hour. To serve, Heat the milk. Break lady fingers into bite size pieces into soup bowl. Pour the warm milk over, add butter & enjoy. You may also eat it as a side dish with salt or jam.
WE enjoyed this meatless meal very much & it was a great way to use up leftover mash potatoes.
