5 large tomatoes, cut in eighths
3 T olive oil
2 T minced garlic
1/4 tsp kosher salt
3/4 tsp black pepper
1 1/2 pd medium shrimp, peeled and deveined
1/2 c chopped fresh parsley
2 T lemon juice
1 cup Feta cheesse, crumbled

Directions:

Preheat oven to 450. Place tomatoes in a large baking dish, 11 X 13 will work. Spoon olive oil and garlic over the tomatoes. Sprinkle with salt and pepper and toss. Place on top rack of oven and roast for 20 minutes. Remove from the oven and stir in the shrimp, parsley and lemon juice. Sprinkle with feta. Return to oven for 10-15 minutes or until shrimp are cooked. Serve warm with crusty bread.
