4 ears of corn
Salt and Pepper
1/4 c. mayo
1 chipotle Chile in adobo sauce
1 1/2 tsp. snipped chives
2 tbsp. extra-virgin olive oil
2 oz. grated Cotija cheese
Lime Wedges, for serving

Directions:
Preheat oven to 425, peel back the corn husks leaving them attached. Discard the silk and season with salt and pepper. Replace the husk and wrap each ear in foil and transfer to a baking sheet. Roast for 30 minutes

In a mini food processor, blend the mayo with the chipotle peppers. Add the chives and oil; process until smooth.

Light a grill, peal back the husks, leaving them attached. Brush the corn with 1/2 the mayo dip and charring the corn. Brush the ears with the remaining may dip, roll in the cheese and serve with a lime.
