2 1/4 cups milk3/4 cup granulated sugar1/2 all purpose flour1/2 tsp. salt3 egg yolks1 tsp. vanilla1/4 cup milk1 Baked 9 inch pie shellMeringue3 egg whites, room temperature1/4 tsp. cream of tartar6 tbsp granulated sugar

Heat first amount of milk in heavy saucepan until it simmers. Meanwhile stir sugar, flour and salt together in bowl. Mix in egg yolks, vanilla and second amount of milk.  Stir into simmering milk until it boils and thickens. Don't cook too long or it will curdle.  If it does curdle, run through blender.Slice bananas into pie shell.Pour cooked mixture over bananas.Meringue:Beat egg whites and cream of tartar until a firm froth. gradually beat in sugar until stiff and sugar is dissolved. pile on top of pie sealing to edges. Bake in 350F oven about 10 minutes until golden brown.Note: For coconut cream pie leave out bananas and add 1/2 cup coconut to the cooked mixture.
