1-15 oz can sweet potatoes mashed.
8 1/4 oz can crushed pineapple, drained
1 egg
1 tsp grated orange peel
1/2 tsp salt
1/4 tsp ground ginger
1 c sour cream
1/4 c packed light brown sugar

Directions:
Directions:
Combine first 6 ingredients. Mix sour cream & brown sugar. Fold 1/2 of sour cream mixture into sweet potato mix. Put into 1 1/2 quart buttered baking dish. Spread rest of sour cream mix over top. Bake for 20 minutes at 400º.
