4 cans (16 oz. each) white hominy
1 pound lean pork roast
1 lime, juiced
4 dry, red chili pods OR 2 bell peppers and 2 chilies
3 cloves garlic, chopped
1/4 tsp. oregano
3 tsp. salt (to taste)
l large onion,chopped
1 tsp. black pepper

Directions:

In a large heavy pot, place the pork, hominy, lime juice, onion, and chilies in enough water to cover the ingredients. Bring to a boil and then cover. Simmer for 3 hours or until the hominy pops open. Add more water if needed. Always keep pot covered. Stir occasionally. Remove the pork and shred it. Return the pork to the pot. Add the garlic, oregano, salt and other spices. Simmer, covered for 30 minutes.
