1 1/2 c. broccoli flowerets
1 1/2 c. cauliflower flowerets
1 c. fresh mushrooms, sliced
1 medium onion, chopped
3 carrots, sliced
1 large tomato, diced
2/3 c. dry white wine
3 garlic cloves, minced
2 tbsp. olive oil
12-16 oz. sliced Muenster cheese

Directions:
Directions:
In a large saute pan, heat olive oil over medium-high heat. Add onions and garlic and saute until onions are translucent. Add broccoli, carrots, and cauliflower and saute 3 minutes or until vegetables are crisp-tender. Add mushrooms and cook and cook another minute. Add tomatoes and wine and bring to a boil. Cook about another 2 minutes. Using a slotted spoon, transfer vegetable mixture to a 9x13 inch baking pan and layer cheese over top. Broil on high just until cheese melts and starts to brown. Remove from oven and serve immediately. Can be used as a main dish or a side dish.
