8 oz. baby carrots
2 tbsp. butter
salt and pepper to taste
1 tbsp. fresh lemon zest, minced
1 tbsp. turbinado or brown sugar
2 tsp. fresh mint, minced

Directions:
Directions:
Boil or steam carrots about 5 minutes, or until partially cooked. Melt butter in a large skillet over medium-high heat. Add carrots; saute 3 minutes or until softened. Season with salt and pepper. Combine zest, sugar, and mint. Sprinkle evenly over carrots.
