"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1 pkg. cut dates
3/4 c. sugar
3/4 c. water
1/2 c. chopped nuts
1 c. Crisco
1 c. brown sugar
1 c. granulated sugar
3 eggs
4 c. flour
1/2 t, salt
1 t. baking soda
1 t. vanilla

Preheat oven to 400.
Combine dates, 3/4 c. sugar, and 3/4 c. water.Cook until thick. Add chopped nuts. Cool.
Cream together Crisco, brown sugar, granulated sugar.
Add 3 eggs and beat thoroughly.
Sift together flour, salt, baking soda. Add to mixture. Add vanilla. Beat until smooth and firm. Divide into 2-3 parts.

Roll out between sheets of waxed paper to 1/2 inch thickness. Lift one side of paper off dough, spread with date mixture. Re-roll and refrigerate until firm. Slice thinly. Bake on greased cookie sheet 10-12 minutes until lightly browned. My family loves these!
Suggestion: I freeze the dough until ready to bake.
