- 1 - 12oz can evaporated skim milk
- 1 1/3 cups - fat free egg substitute
- 3 tbsp - granulated sugar
- 3 cups - skim milk
- 2 tbsp - vanilla
- 1/2 tsp - cinnamon
- 1/4 tsp - fresh grated nutmeg
- tub of light cool whip topping

- in a large saucepan over low heat, combine evaporated milk, egg, sugar
- cook stirring constantly, until bubble begin to form around edges, and mixture thickens - approximately 12 -15 minutes
- add skim milk, vanilla, cinnamon, nutmeg
- increase heat, cook till heated through - approximately 5 minutes
- serve immediately with a dollop of whip topping in each cup and a grating of nutmeg.
