Chicken drumsticks, breasts or thighs
1 jar of medium heat salsa
1 tbsp olive oil

Directions:
Directions:
Preheat oven to 425ºC.

Line a deep baking pan with tin foil and coat with olive oil so chicken does not stick.

Wash chicken and place in baking pan.

Spoon salsa generously over chicken and place in oven. After approximately 10 minutes, remove chicken from oven and spoon more salsa over - return to oven. Repeat until chicken is done.

Be careful not to burn. (Good if broiler is put on for the last 5 minutes in oven).

Serve with long grain wild rice.
