1 c chopped onions
1/4 c olive oil
1 1/2 lbs boned veal steak or scallopini
1/4 c sifted flour
1/2 tsp salt
1/2 tsp pepper
1 8 oz can button mushroom pieces and stems
1 c or Sauterne or Chablis Wine

Directions:
Directions:
Saute onions in heated oil; remove to casserole. Roll veal in flour seasoned with salt and pepper; brown in oil. Arrange veal on top of onions. Add mushrooms to skillet and saute for a few minutes then add wine and stir well until all goodies are scraped from the bottom of the skillet. Pour over veal and onions. Cover and bake in a moderate 350º oven for 1 1/4 hours. Remove cover for last 1/2 hour. Serve with baked potatoes, green peas and salad.
