9 lasagna noodles
6 - 8 medium potatoes
2 c. shredded Cheddar cheese
1/2 c. butter
1 tsp. salt
1/2 tsp. garlic salt
2 c. Ricotta cheese
1/2 c. Parmesan cheese
1 egg
1/2 tsp. garlic powder
1/4 butter
1/4 small onion
3/4 c. chopped bacon

Directions:

1. Cook lasagna noodles according to package directions.
2. Boil potatoes, then mash them with butter, cheddar cheese and salts. Set this aside.
3. Mix Ricotta cheese with the Parmesan, egg and garlic powder. Set this aside.
4. Alternate 3 noodles, then cheese mixture, 3 noodles, then potatoes, 3 noodles on top.
5. Saute onions in butter with bacon and pour over top layer of noodles. Bake covered at 375°F for 45 minutes. Let sit 15 minutes before serving

Alan's Mom introduced me to the "pierogi". Our church, St. Anthony of Lorain, does a fundraiser during Lent making and selling 6,200 DOZEN pierogi each year!
