1 onion, chopped
1 tbsp. olive oil
1 red bell pepper, chopped
1 garlic clove, minced
1 tsp. dried basil leaves
1/2 tsp. dried thyme
1 1/2 lb. ground beef
1/2 lb. ground pork
1 c. oatmeal
2 egg whites
4 oz. shredded mozzarella cheese
1/2 c. Parmesan cheese, grated
2 tbsp. parsley
3/4 tsp. salt
1/4 tsp. pepper
1/4 c. ketchup

Line loaf pan with foil. Saute onion in oil for 3 minutes. Add red bell pepper, garlic, basil, and thyme and saute for an additional 5 minutes. Remove from heat. Combine ground beef, pork, oatmeal, egg whites, mozzarella cheese, Parmesan cheese, parsley, salt, and pepper. Add vegetable mixture and stir well. Form into a loaf and place in foil lined loaf pan. Bake at 375 for 30 minutes. Brush with ketchup and bake 25 minutes longer or until cooked through. Let stand 10 minutes before slicing.
