Preheat oven to 375ºF. 1. Chop all herbs with hands. 2. Rub herbs onto skin and wrap the coated chicken with plastic wrap and refrigerate overnight or several hours. 3. Remove plastic wrap and roast 20 minutes per pound at 375ºF. Let stand 10 minutes before serving.
