1 can Mexican Stewed Tomatoes
1 can corn
1 can Ranch Style Beans
1 can Rotel Tomatoes
1 package dry ranch dressing
1 package chicken taco seasoning
3 to 4 cups water
2 cloves garlic
1 diced small onion
3 to 4 skinless diced chicken breasts
fresh cilantro to taste
˝ block Velveeta light processed cheese

Cook chicken breast for 20 minutes in a pressure cooker. Add all remaining ingredients to crock pot (or in pot on stove) saving the cheese for the Last 30 minutes of simmering. Serve over “WOW Tostitos”, and add a dollup of fat free sour cream to each serving, if desired.
