Let prime rib stand at room temperature for one hour. Preheat oven to 375 degrees. Generously season roast with sea salt, fresh ground pepper and rosemary and place in shallow roasting pan. Do not cover and do not add water. Bake for one hour. Turn off heat but do not open oven door at any time until ready to serve. Roast must be in oven for at least 2 hours.Turn on oven again to 375 degrees and bake for an additional 40 minutes. Remove roast from oven and transfer to cutting board.
