2 to 3 qts. zucchini and yellow squash, chopped
1 large onion, chopped
1 c. carrot, grated
1 can cream of chicken soup
1 c. sour cream
1 stick butter
1, 8 oz. bag stuffing mix

Preheat oven to 350F.
1. Fill 3 qt. pan with zucchini, yellow squash, and onion. Cover with water, boil 5 minutes, drain well.
2. Add cream of chicken soup, sour cream, and carrots. Mix well.
3. Melt butter and add stuffing; mix well.
4. Place half stuffing mix in bottom of 9 x 13" pan and pour all of zucchini mix over the stuffing. Then place rest of stuffing mix on top. Bake for 1/2 hour.
