1 box yellow cake mix
4 eggs
1 can mandarin oranges, undrained
1/2 c. canola oil
1 (8 oz.) container whipped topping
1 small package instant vanilla pudding mix
1 large can crushed pineapple, drained

Directions:
Directions:
Preheat oven to 350º. Grease a 9x13 inch baking pan. Combine cake mix, eggs, mandarin oranges with juice, and canola oil. Beat with an electric mixer for 4 minutes. Pour into baking pan and bake for approximately 30-35 minutes or until toothpick comes out clean. Cool. For icing, combine whipped topping, vanilla pudding mix, and crushed pineapple. Spread over top of cake. Refrigerate before serving.
