Noodles:
1 lb. dry Chinese noodles
2 T. sesame oil

Peanut Butter Sauce:
1/4 c. creamy peanut butter
2 T. peanut oil
1 clove minced garlic
2 T. sesame oil
1/2 tsp. salt
5 tsp. sugar
2 T. soy sauce
2 T. rice vinegar
1/4 c. cold water
3 T. chili paste w/garlic

Soy Sauce Vinegar:
1/4 c. soy sauce
1/4 c. rice vinegar
2 T. sesame oil
2 tsp. sugar

Directions:

Noodles:
Boil noodles in water for about 8 minutes. Drain and rinse with cold water. Drain again. Place noodles in large bowl, add sesame oil and toss to
coat.

Peanut Butter Sauce:
Combine peanut butter and peanut oil, stir until smooth. Gradually add garlic, sesame oil, salt, sugar, soy sauce, vinegar, water, and chili paste. Stir until smooth.

Soy Sauce Vinegar:
Stir together all ingredients until well blended.

To complete dish:
Pour Peanut Sauce over noodles, toss to coat. Refrigerate 2 hours or overnight. Serve with Soy Sauce Vinegar on the side.

These are the best noodles. They are really good alone, but also with things like cucumbers, chicken, or bean sprouts.
