6 T butter, softened
3 C plus 2 T flour
3 t baking powder
1 t salt
1 3/4 C sugar
1 large whole egg + 2 large egg yolks
1 t vanilla
1 C milk
1 3/4 C blueberries (can use frozen or fresh)

Directions:
Directions:
- butter/grease 12 muffin tin, heat oven to 375
- sift dry ingredients
- in electric mixer, cream butter and sugar until fluffy, about 3 minutes
- add eggs and vanilla, mix until well combined
- alternate adding flour mixture and milk - beginning and ending with flour
- fold in blueberries
- divide evenly in tins, sprinkle with demerra sugar if you have it and bake about 30 minutes
- cool for 15 minutes prior to removing from pan
- enjoy!! =)
