3 (14oz) cans artichoke hearts, drained and chopped
2 large eggs, lightly beaten
1/2 c chopped red bell pepper
2 tbsp chopped green onions
1 c soft breadcrumbs
3/4 c mayonnaise
1/4 c whipping cream
2 tbsp fresh lemon juice
2 tsp Dijon mustard
1 tsp salt
1 tsp Worchestershire sauce

1. Squeeze liquid from artichokes using paper towel. Place artichokes in a bowl, add eggs and next 3 ingredients. Combine mayonnaise and next 5 ingredients in a seperate bowl; stir well. Add mayonnaise mixture to artichoke mixture stir gently until blended. Cover and chill at least 2 hours.
2. Place a large skillet over med high heat. Scoop artichoke mixture into 1 1/2 inch balls and place in skillet and flatten slightly. Cook 2 to 21/2 min on each side. Transfer to a lightly grease baking sheet and bake at 400 deg for 10 to 12 min. Serve w/Cajun Remoulade.
