3 cups of flour
1 tsp. baking soda
1 1/4 cup of oil
2 cups of sugar
1 cup of chopped pecans
1 tsp. salt
1 tsp. cinnamon
2 tsp. vanilla
2 eggs
3 cups apples

Directions:
Directions:
Bake at 350º for 1 hour
Chop nuts and apples. Stir together all dry ingredients except sugar. Add oil and vanilla and beat until foamy. In separate bowl beat eggs until thick and foamy. Slowly add sugars and continue beating. Fold the eggs and sugar. Add nut and apples. Pour into a tube pan. Leave in the pan 15 minutes after baking.

I got this recipe from Mawmaw D'wanna. I have used it many times and I always thought of it as an "elders cake". Guess who is an elder now? I made it many times for Grandpa JD. Remember when we had the apple tree in the front yard and it made just enough apples to make a cake. It was definitely fresh apples. Then one day Cullen was like George Washington and the cherry tree and cut the apple tree.
