1/2 cup finely minced red onion
3 tbsp. Dijon mustard
3 tbsp. red wine vinegar, divided
1/2 tsp. sea salt
pepper
1/2 cup olive oil
2 ibs. gold Yukon potatoes
2 cups diced tomatoes, including seed and juice

Directions:
Directions:
Vinaigrette:
In a bowl, whisk together onion, mustard, 2 tbsp. red wine
vinegar, salt & pepper. Gradually whisk in olive oil.

Cook potatoes until tender. Transfer to sheet pan and sprinkle
with remaining red wine vinegar. Transfer to bowl. Add small
amount's of vinaigrette until achieved taste.
