Olive oil flavored cooking spray
1 cup chopped onion
½ cup chopped green pepper
½ tsp ground cumin
½ tsp ground coriander
1/8 tsp ground red pepper
1 15 oz can black beans, rinsed and drained
1 cup cooked long grain rice
¾ cup chopped tomato (could use diced in can)
1 T red wine vinegar

Coat skillet with spray. Heat up over medium heat. Add onion and pepper; sauté until crisp tender. Add 3 spices, sauté 3 minutes. Stir in beans and remaining ingredients, and cook until heated.
