1 ¾ cup margarine or butter
2 teaspoons of grated lemon rind
1 cup sugar
5 ½ cup all purpose flour
1 cup brown sugar
½ teaspoon salt
2 Tablespoons lemon juice
½ teaspoon baking soda
2 eggs

Directions:
Directions:
Mix all ingredients well. Form into small balls and place on ungreased cookie sheets. Then flatten with bottom of drinking glass. (Can dip glass in flour to prevent sticking.)
Bake at 350 degrees for 10 to 12 minutes until golden brown.
** To make orange cookies, substitute orange juice for lemon juice and orange rind for lemon rind.
MAKES 3 to 5 dozen
