4 medium scrubbed sweet potatoes, leave skin on 2 T olive oil 1/2 tsp. salt 1/4 tsp. pepper
Heat oven to 450º. Cut potatoes into 1/2 inch wedges. Toss potatoes with oil in a large bowl. Sprinkle with salt & pepper. Spread potatoes in a single layer on a 15 1/2 x 10 1/2 x 1 inch pan. Bake uncovered for 25-30 minutes, turning occasionally, until potatoes are golden brown and tender when pierced with fork.
