Purchase 1 large rotisserie roasted chicken at your grocery store and shred into small pieces.
1/3 cup light mayonnaise (more or less to taste)
1 green apple diced
1/3 cup chopped pecans or walnuts
1/2 cup red grapes cut in half
2 stalks celery diced
1 bunch green onions chopped
1/2 tsp. curry powder
1 tsp fresh ground pepper
Kosher or sea salt to taste

Mix together. Serve in iceberg lettuce cups or on whole wheat toast with lettuce, tomato and light Swiss cheese if desired.
