3 eggs
1 cup vegetable oil
2 1/4 cups sugar
2 cups grated zucchini
1 1/2 tsp. vanilla
3 cups all purpose flour
1 tsp salt
1 1/4 tsp. baking powder
1 tsp. baking soda
1 tbsp cinnamon
1 cup nuts (walnuts or pecans)

Mix all ingredients and spoon into 3 greased loaf pans.
Bake at 350 for one hour.
Let cool for 30 minutes, then remove from pans.
