3 pints cherry tomatoes, halved
12 oz feta cheese, cut into 1/4 inch dice
1/4 c extra-virgin olive oil
3 tbls white wine or champagne vinegar
2 tbls minced fresh basil
2 tbls minced fresh parsley
3/4 tbls salt
1/2 tsp freshly ground pepper

In a serving bowl, gently toss all ingredients. Serve immediately or chill covered until ready to serve.

This recipe is similar to a fabulous salad like this served in the summertime at Panera Bread Company. Dave and I have spent many a Saturday for lunch enjoying this favorite of ours.
