4 tazas de pallares secos
3 cucharadas de mantequilla
½ taza de queso parmesano
½ taza de crema de leche (se puede sustituir por leche evaporada pura)
2 hojas de salvia
sal y pimienta

Directions:
Directions:
Remojar los pallares durante la noche. Escurrir, pelar y retirarles el germen que cada uno tiene pues eso amarga. Colocar en una olla grande con agua fría con sal que llegue al nivel de los pallares y las hojas de salvia. Cocinar hasta que estén tiernos. Cinco minutos antes de eso, retirarle aproximadamente 1 ½ taza de su líquido y reservar éste por si se necesitase.

Ya tiernos retirarlos y licuarlos o procesarlos, y si fuera necesario ayudarse con el caldo a poquitos para formar un puré sedoso (no aguado). Pasar a la olla y agregarle la mantequilla, queso parmesano y crema de leche. Mezclar bien y sazonar con sal y pimienta a gusto Servir bien caliente.
