4 fish fillets, white fish, tilapia preferred
1 med. zucchini, sliced thin
1 med. summer squash, sliced thin
4 green onions, finely chopped
2 T. orange zest, divided
2 T. olive oil (orange flavored if possible)
salt and pepper, to taste
parsley and thyme for garnish (optional)

Place empty baking sheet on middle oven rack; preheat to 500º. Tear 4 sheets of parchment paper into 12" length. Paper should be cut into a heart shape. (You can just tear it). Pat fish dry ad season with salt and pepper; lay fish on paper. Cover with veggies and top with orange zest and oil. Fold as tightly as possible. Place on baking sheet; bake 10 minutes. Serve IN the parchment paper for good looks! Serve with mango citrus salsa (in Sauces, Jams & Jellies section).
