½ - ¾ c. fresh blackberries, divided
½ cup chicken broth, divided
2 T. brown sugar
2 T. white wine vinegar
1 tsp. olive oil
2 garlic cloves, minced
¾ tsp. paprika, divided
¼ tsp. ground cumin
6 boneless skinless chicken breast halves
4 ½ tsp. minced fresh thyme
½ tsp. salt
¼ tsp. pepper
2 tsp. cornstarch

Directions:

Mash about 2 T. of the berries and then add the broth, brown sugar, vinegar, oil, garlic, 1/4 tsp. of the paprika and cumin. Place chicken in greased baking dish and pour broth mixture over top. Sprinkle with thyme, salt, pepper and remaining paprika. Bake at 375º for 20-25 minutes. Skim fat from drippings and in a small saucepan, combine cornstarch with remaining broth. Stir in drippings. Bring to a boil; cook until thickened. Serve with the chicken. Sprinkle remaining berries onto chicken.
