4 skinless, boneless chicken breast halves
1/4 c flour for dusting
1 tsp salt
1 tsp ground black pepper
1 tbls olive oil
2 1/2 c fresh sliced mushrooms
2 c heavy cream
1 c champagne

Directions:
Directions:
Lightly dust chicken breasts with flour and a little salt and pepper. In a large skillet, lightly brown chicken breasts to a nice gold brown in olive oil. Once browned on both sides, add mushrooms and champagne. Cook over medium heat (champagne should boil a little) for approximately 1/2 hour. When chicken is tender, transfer it to a platter.
Pour cream into skillet. Simmer about 5 minutes until slightly thickened. Pour sauce over chicken breasts and serve.

Ben and Sarah love to entertain at their house in Denver and especially love to cook together for friends and family. Ben spent the fall of 2007 and part of the winter of 2008 making a gorgeous kitchen where they can cook and laugh and it is easily where they spend the majority of their time at home together. They are always finding new recipes--but this recipe along with other menu items is their favorite. They often use it for special occasions like birthdays or big celebrations such as New Years Eve or Valentine's day. The chicken is so tender and delicious! The other menu items include Four Cheese Risotto, Green beans, and some kind of cake.
