Grandma Lue's Frog Eye Salad Recipe

3/4 c sugar
1 tbls flour
1/2 tsp salt
2/3 c pineapple juice
1 beaten egg
1 tsp lemon juice
1 c Acini Di Pepe pasta
2 cans (11 oz each) mandarin oranges, drained
1 can (20 oz) chunk pineapple
1 can (20 oz) crushed pineapple, drained and squeezed
1 carton of whipped topping
1- 1 1/2 c of mini marshmallows

In a small pan, mix sugar, flour, and salt. Whisk in pineapple juice and beaten egg. Cook over moderate heat, stirring constantly with whisk to make smooth until thickened. Add lemon juice and set aside to cool (You can place it in the refrigerator to speed up the process.)
Cook pasta according to directions. Combine drained, cooked pasta with now cooled sauce mixture. Continue refrigerating until well-cooled. Combine with remaining ingredients--stir lightly. Chill at least one hour before serving.
