Cake:
2 c sugar
2 c flour
2 tsp cinnamon
1 tsp baking soda
4 c sliced apples
2 eggs
1 c salad oil
1 tsp vanilla
1/2-1 c chopped nuts (optional)

Frosting:
6-8 oz cream cheese
3 tbsp melted butter
1 tsp vanilla
1 1/2 c powdered sugar

Directions:

For cake:
Preheat oven to 350. Grease and flour a 13x9.2 inch pan.
Stir in sugar, flour, cinnamon, baking soda, and salt together in a bowl. Stir in apples and nuts. Beat eggs with oil and vanilla. Pour into dry ingredients and stir just enough to combine thoroughly (don't use a mixer).
Bake 45-60 minutes, or until it tests done.

For frosting:
Whip together cream cheese, butter and vanilla.
Gradually work in powdered sugar to desired consistency. Frost cake and enjoy!
