3 cans chicken broth
1 can Ro-Tel diced tomatoes, undrained
1 (16oz) pkg. frozen tortellini
1 (1 lb) bag frozen corn, broccoli, and red peppers mix
1-2 cups cooked chicken (a rotisserie chicken from the store makes this even easier! Use canned chicken in a pinch.)

1 (5 oz) can evaporated milk
1/2 # Velveeta cheese (cubed)...lite is fine
salt/pepper

Directions:

In soup pot, combine broth and tomatoes and bring to a boil.
Reduce to low and simmer 3 min. Stir in tortellini and cook 4 min.
Add corn mixture and chicken. Cook over med. heat 6-8 min. ntil veggies are tender.
Stir in milk and cheese. Stir until heated through and melted. Do not boil or it will curdle!

Frozen corn, broccoli, and red pepper mix is getting hard to find. The red peppers are only for color, so you can just use broccoli and corn.
