10 large eggs
2 c. cottage cheese
2 c. low-fat Monterrey Jack or Cheddar Cheese
2 (4.5 oz) cans chopped green chiles
1/2 c. flour
1 tsp baking powder
1/2 tsp salt

Directions:
Directions:
Break eggs into a large bowl, and beat until light. Add remaining ingredients, blending thoroughly. Pour into a well-greased 2 qt. baking dish, and bake in a 350º oven for 1 hour, or until top of casserole is browned and center is firm. Cool for 5 minutes before slicing. Serve with fresh salsa.

Depending on your own oven, if you aren't sure if the eggs are set, insert a clean knife into the middle of casserole. If the knife comes out clean, it is done.
