3 large eggs
3 C flour or 2 C flour and 1 C oatmeal
1 tsp. salt ,1 tsp cinnamon
3/4 C grated coconut
3 C grated zucchini or pumpkin
2 tsp. vanilla
1 tsp. baking powder
2 C sugar
1/2 tsp. ginger
3/4 C chopped walnuts
1 C salad oil
1 tsp. baking soda

Mix all ingredients together
Grease and flour two loaf or one large tube pan
Place wax paper or tin foil in bottom of pans if you like. Be sure to grease paper/foil. Bake at 350 degrees for 1 hour.
