3-4 tsp olive oil
1 5-6 lb. pork loin or pork butt roast
1 cup plum wine
3 cloves garlic, chopped
1 small onion, chopped
Salt and pepper to taste or Cajun seasoning

Directions:
Directions:
Rub roast with a thin coating of olive oil, salt and pepper or Cajun seasoning and refrigerate overnite.

Remove roast and place in a slow cooker with onions, garlic and plum wine. Cook on med-lo setting and cook for 6-8 hours.

Remove roast from slow cooker . With two forks shred meat into a large bowl. Discard drippings from cooker and return shredded pork to cooker. Warm meat in your favorite barbecue sauce until heated.

Serve on hamburger buns. Great served with Cole-slaw on the side.
