4 eggs
2 c. milk
2 c. flour
1 tsp. salt

Directions:
Directions:
Heat oven to 450º. Grease 12 deep muffin cups. Beat eggs slightly by hand. Add milk, flour and salt. Beat until smooth. Do not overbeat. Fill muffin cups ½ full. Bake 25 minutes. Decrease oven temperature to 350º. Bake 15-20 minutes longer. Remove from muffin tins immediately. Serve hot.

These may be served hot with butter or jam. Growing up, my girls loved to eat these with homemade strawberry jam.
