1 tbsp. corn starch
1 14 1/2 oz. can Italian Style stewed tomatoes
1/3 cup Italian style bread crumbs
1/3 cup grated Parmesan cheese
4 boneless skinless chicken breasts
3 tbsp of olive oil
4 slices of mozzarella cheese

Directions:
Directions:
In a small saucepan dissolve cornstarch in tomatoes. Cook, stirring constantly until thickened. Keep hot. Combine bread crumbs and Parmesan cheese. Pound out chicken and dip into crumbs, coating well. Fry in oil 3 to 4 minutes on each side. Place 1 slice of cheese on each piece of chicken. Cover and cook until melted. Place on serving plate and top with sauce. Serve over spaghetti noodles or ravioli.
