1 c. onion, diced
1 c. celery, diced
1 c. carrots, diced
**or any other vegetable you like, i.e., broccoli, cauliflower, corn, diced
½ c. margarine
1 c. half & half cream
2 c. chicken broth
salt and pepper, to taste
½ c. flour
4 c. cooked chicken, diced
pie crust

Directions:
Sauté vegetable in butter. Stir in flour, then half & half and chicken broth. Add chicken, stir. Put in pan and cover with crust. Bake 375º for 1 hour.

The recipe calls for pre-made pie crust and only one layer, I prefer homemade pie crusts and I use both top and bottom layers in a huge pie pan.
