1/2 lb. Italian sausage
3 small/medium zucchini, cut in 1/2 inch slices
1 small can tomato paste
3 cups hot cooked rice
1 t. season salt
1/3 cup grated Parmesan cheese
1/2 cup chopped onion
1 cup water
1 t. dried basil
1/2 cup shredded Mozzarella cheese.

Directions:
In a 10 inch skillet, cook sausage and onion until sausage loses redness. Remove and drain on paper towel. Saute Zucchini in remaining fat in skillet until transparent. Cover, cook 5 minutes or until almost done. Combine tomato paste with water. Combine half with rice and sausage mixture in 2 quart baking dish. Add basil and salt. Mix well. Sprinkle with mozzarella and Parmesan cheese. Spoon remaining pasta mixture over all.

Bake covered at 350º oven.

This is so good, but my kids hated it when they were growing up as they never liked zucchini.
