1 8 ounce can pineapple chunks
3 cups frozen cauliflower, broccoli & carrots
1/4 cup water
2-3 boneless, skinless chicken breasts, cut up
1 - 8 ounce carton plain low fat yogurt
2 T. flour
2-3 t. curry powder
1/2 t. salt
2 T. chopped salted peanuts

Drain pineapple, reserving juice, set aside.

In a 2 quart casserole combine frozen vegetables and water. Cook on high power for 4 to 6 minutes or until vegetables are nearly thawed, stirring once. Drain.

Stir in chicken and reserved pineapple juice (this tends to curdle so I don't use the pineapple juice. I use water instead). Cook covered on high for 5 to 8 minutes or until chicken is no longer pink, stirring once.

Meanwhile, for sauce, stir together yogurt, flour, curry powder and salt into casserole. Cook, uncovered, on high for 4 to 7 minutes or until sauce is thickened and bubbly, stirring after every minute. Stir in pineapple chunks. Cook, uncovered, on high for 30 seconds or until heated through. Garnish with peanuts.
