1/2 c. butter
1 c. sugar
1 egg
1 tsp. vanilla
1 c. milk
2 1/2 c. flour
1/2 tsp. baking powder
1 1/2 tsp. soda
1/2 tsp. salt
1/2 c. cocoa

Filling:
1/2 c. shortening
2 c. powdered sugar
1 tsp. vanilla
3 to 4 T. milk
1 c. Marshmallow Creme

Directions:
Directions:
Cream together butter, sugar, egg, vanilla, and milk. Mix in dry ingredients. Drop by teaspoon onto greased or parchment lined cookie sheet. Bake at 400º for approximately 7 minutes. When cooled, take two cookies and put together with the filling.

To many in our family, Whoopie Pies and Aunt Ernestine are synonymous. Just the mention of these cookies brings a smile and memories of baking them in Aunt Ernestine's kitchen at the old farmhouse. I'm sure my sisters and I made quite a mess but I don't recall, Ernestine never would have made a fuss over a little mess. Evidence of that is when Andrea fell into a fresh cowpile. She cried but Ernestine just rinsed her off with the garden hose - and Uncle Roger just laughed.
