2 t. olive oil
1 1/2 C. chopped onion
2 cloves garlic, minced
4 C. cubed, peeled sweet potato (about 1 1/2 lbs.)
1 1/2 C. cooked red beans
1 1/2 C. veggie broth
1C. chopped red bell pepper
1/2C. water
1t. grated pelled ginger
1/2 t. salt
1/2 t. cumin
1/2 t. pepper
1(14.5 oz.) can diced tomatoes, drained
1(4.5 oz.) can chopped green chiles, drained
3T. peanut butter
6 lime wedges

Directions:
Directions:
Saute garlic and onion 2 mins. Put into slow cooker with all ingredients except peanut butter and lime. Cook on low 8 hours or until veggies are tender. stir peanut butter into stew. serve with lime wedges.
