Mealie Meal (white corn meal)

Directions:
Directions:
Fill pot 3/4 full with water; bring to boil. Put 1 cup of mealie meal in medium size bowl and mix with cold water until it is a watery-smooth paste with no lumps. Add this mixture to boiling water; stir quickly. Put lid on pot and let boil for just a minute. Then begin adding mealie meal 1 cup at a time. Use wooden spoon and mix well after each addition. Continue adding mealie meal until mixture begins to thicken and will fall away from spoon. Stir hard and continuously so there are no lumps. Serve with Stew. (see African Stew recipe)

Personal Notes:
Personal Notes:
This is a traditional staple food for Eastern and Southern Africa. It is used like the Cajun's use rice - eaten every day!
