1 (18.25 ounce) package yellow cake mix
1 teaspoon baking powder
1/3 cup self-rising flour
1/2 tsp. baking powder
2 eggs
1 1/2 sticks of butter or 1/3 cup oil
1 tsp cinnamon
2 tsps vanilla extract
For the rest of the ingredients go to the pantry and put in anything your family likes. I have tried the following:
1 cup quick-cooking oats
1 cup walnuts or pecans
1/2 cup chopped dates
1/2 cup coconut
1/2 cup raisins
1/2 cup craisins
1/2 cup butterscotch chips
1/2 cup sunflower seeds
1 cup semisweet chocolate chips or other goodies



Directions:

Preheat oven to 350 degrees F. In a medium bowl, stir together the cake mix and baking powder. Add eggs and oil, then mix until well blended. Stir in chocolate chips, or your choice of additions. Drop by rounded spoonfuls onto cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Bake less for chewy cookies and more for crispy cookies. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely. Also, you can bake a 10" round cookies out of this. Bake a little longer and then decorate.

Today I am going to try a Carrot Cake Mix, oatmeal, white chocolate chips, craisins and nuts. If you have a cake mix, your favorite brand, you are ready for Pantry Cookies. P.S. I just finished the carrot cake mix and it works!
